I had these red bellpeppers in my fridge and I didn't want them to go bad, so I started searching on the internet to find recipes that I could use. The first things that came up was Stuffed Bellpeppers.
There were so many creative recipes that I didn't know which ones to choose, so I decided to make up my own. All you have to do is look in your cabinets and use what you already have. This was the easiest recipe to make and become really creative in the process.

I love Lasagna and since I don't eat meat I have to really become creative when it comes to cooking dishes that required meat. Edit to say I occasionally eat fish, chicken and turkey but I've never acquired a taste for ground turkey in my Lasagna for some reason so I just prepare it with vegetables and leave out the ground turkey.
I prepare it the same way as most people except that I don't layer it, it's really just a quick and simple recipe that only takes 15 minutes to prepare.

It's been such a long time since i've posted anything cooking related, I thought I would talk about this Edamame salad I bought to compliment the grilled shrimp i've been lemming for.
If you don't like the taste of edamame, then you might not like this salad. It has sort of a sweet, sour and tangy taste thanks to the cranberry's and vinaigrette dressing. With all that going on, they sort of drown out the flavor of the edamame, well all I will say is... this salad isn't for the faint of heart!

I bought this stove top grill for $35.00 at the San Diego State Fair earlier this summer. Needless to say it has gotten very good use, not only do I make weekly kabobs, I grill fish, corn of the cob, chicken and vegetables.

Today I grilled shrimp and scallops with teriyaki sauce. Along with that I tossed a chinese oriental chicken salad and added some fruit..... Preparation time was 15 minutes maximum.

I will admit that I didn't cook the crabs and I bought them already cooked. But I did make the warm Pasta Salad which was very simple!

My husband and I celebrated dinner with just the two of us. Our dinner included of course a Turkey, Stuffing, Sweet Potatoes, Collard Green, Gravy, Dinner Rolls and an Apple Pie. I prepared everything myself except for the dinner rolls and the apple pie, I bought the pie at Coco's.

Everybody has a different way of cooking Grilled Chicken Fajitas even me. When I really don't feel like preparing a complicated meal, I pull out some chicken and start preparing my simple Fajita recipe. Now it only takes me 30mins to prepare this because I buy everything already cut up most times, very rarely do I spent time chopping up meet and veggies.

I don't know about you but when I need something simple to cook that's going to last for a couple days, I make Simple Turkey Spaghetti. I use Prego but I add lots of other goodies in to give it that special Italian flavor. I sprinkled a little Parmesan cheese on the top and served it with plain ole wheat toast. I was so in love with this simple delicious recipe for Salmon Croqettes. I decided to pair it with some sauted aparagus using the same pan I used for the croqettes. Don't you just love preparing a meal without using multiple pots and pans.... I do!

I don't eat a lot of Ground Turkey so my recipes are limited when it comes to preparing dishes with Ground Turkey. As usual, I went to Krista Kooks to see what dishes she had prepared and wolla... I loved this Turkey Enchilada Casserole with all the ingredients to make it on the spot. I was very pleased with how it came out so she get's a thumb's up on this one.
