Cooking ~ Stuffed Red Bellpeppers with Wild Rice

I had these red bellpeppers in my fridge and I didn't want them to go bad, so I started searching on the internet to find recipes that I could use. The first things that came up was Stuffed Bellpeppers.

There were so many creative recipes that I didn't know which ones to choose, so I decided to make up my own.  All you have to do is look in your cabinets and use what you already have.  This was the easiest recipe to make and become really creative in the process.

Quick and Simple Vegetarian Lasagna

I love Lasagna and since I don't eat meat I have to really become creative when it comes to cooking dishes that required meat.  Edit to say I occasionally eat fish, chicken and turkey but I've never acquired a taste for ground turkey in my Lasagna for some reason so I just prepare it with vegetables and leave out the ground turkey.

I prepare it the same way as most people except that I don't layer it, it's really just a quick and simple recipe that only takes 15 minutes to prepare.

Cooking ~ Grilled Shrimp with Edamame Salad

It's been such a long time since i've posted anything cooking related, I thought I would talk about this Edamame salad I bought to compliment the grilled shrimp i've been lemming for.

If you don't like the taste of edamame, then you might not like this salad.  It has sort of a sweet, sour and tangy taste thanks to the cranberry's and vinaigrette dressing.  With all that going on, they sort of drown out the flavor of the edamame, well all I will say is... this salad isn't for the faint of heart!

I bought this stove top grill for $35.00 at the San Diego State Fair earlier this summer.  Needless to say it has gotten very good use, not only do I make weekly kabobs, I grill fish, corn of the cob, chicken and vegetables.

My husband and I celebrated dinner with just the two of us.  Our dinner included of course a Turkey, Stuffing, Sweet Potatoes, Collard Green, Gravy, Dinner Rolls and an Apple Pie.  I prepared everything myself except for the dinner rolls and the apple pie, I bought the pie at Coco's.

I don't know about you but when I need something simple to cook that's going to last for a couple days, I make Simple Turkey Spaghetti.  I use Prego but I add lots of other goodies in to give it that special Italian flavor.  I sprinkled a little Parmesan cheese on the top and served it with plain ole wheat toast. I was looking through my freezer deciding what to cook when I saw the shrimp, I said to myself.... humm, I bet I can turn this into something delicious  like Shrimp Peas & Rice that won't take too long to cook.  So, I took out a box of "Rice a Roni" from the cabinet and prepared it according to the direction on the back of the box. Then before I let it simmer, I added the peas and the shrimp. After about 15 minutes of simmering, it was ready.... all it all , this simple meal took about 30 minutes to make and was simply delicious!
