I had these red bellpeppers in my fridge and I didn't want them to go bad, so I started searching on the internet to find recipes that I could use. The first things that came up was Stuffed Bellpeppers.
There were so many creative recipes that I didn't know which ones to choose, so I decided to make up my own. All you have to do is look in your cabinets and use what you already have. This was the easiest recipe to make and become really creative in the process.
I had a box of Wild Rice so I went ahead and prepared that according to the box. I also had some tuna so I drained the tuna, added some green onions and a little sea salt. Once the rice was done, I went ahead and started preparing the bellpeppers. I cut the tops off and proceeded to clean the insides. Once that was done, I started layering the peppers with the tuna and the rice. Then I baked them on 350 until the peppers were soft to the touch. The rice got a little brown on top but it didn't change the taste..... simply delicious!
