Quick and Simple Vegetarian Lasagna

I love Lasagna and since I don't eat meat I have to really become creative when it comes to cooking dishes that required meat.  Edit to say I occasionally eat fish, chicken and turkey but I've never acquired a taste for ground turkey in my Lasagna for some reason so I just prepare it with vegetables and leave out the ground turkey.

I prepare it the same way as most people except that I don't layer it, it's really just a quick and simple recipe that only takes 15 minutes to prepare.

When I can I try and buy fresh vegetables, especially Broccoli.   Fresh Broccoli has so much flavor which is lost in the frozen kind.  I steam it slowly for about 20 minutes then strain and break into small pieces.  I try and break up the large chunks because I like it smooth and it doesn't fall apart when you're trying to cut it into squares.

I spray the bottom of my pan with Cooking Oil spray, then I lay the noodles on the bottom.  I spread a thick coat of Prego on top.  Then I add the vegetables.

I then add another layer of noodles on top of the vegetables.  I cover the noodles with cheese.  Once thoroughly covered, I spread more Prego on top of the cheese covering the cheese totally.  I bake it on 350 until I feel it has settled.  Then I place it in the broiler so that my sauce can become slightly crusted. Below is the finished product.
