 Roasted Butternut Squash with Pistachios & Golden Raisins
The reality stars Giuliana & Bill Rancis are owners of Chicago eatery named "RPM Italian" are sharing some of their favorites with us this holiday season. This is one of their patron's favorite salads which is a dish that's tossed with baked squash, golden raisins, pistachios and a dash of sea salt.



 Roasted Butternut Squash with Pistachios & Golden Raisins

Makes 4 servings
INGREDIENTS:
  • 1 1/2 cups(½-in.) peeled butternut squash cubes
  • 3 tbsp.olive oil, divided
  • 1 tbsp.fresh lemon juice
  • 1 tsp.honey
  • 6 cupsspinach
  • 1/2 cuptoasted pistachios, chopped
  • 1/2 cupgolden raisins
  •  Sea salt
  •  Freshly ground black pepper

STEPS

  1. 1Preheat oven to 400ยบ. Combine squash, 1 tbsp. olive oil and ½ tsp. sea salt on an aluminum foil-lined rimmed baking sheet, tossing to coat.
  2. 2Bake 20 to 25 minutes until tender, stirring after 15 minutes. Transfer to wire rack; cool.
  3. 3Whisk lemon juice, honey, remaining olive oil and ½ tsp. each salt and pepper in small bowl; set aside.
  4. 4Combine spinach, squash, pistachios and golden raisins in large bowl. Drizzle with dressing and toss.
