Crispy Chicken Costoletta with Green Beans
This is the second time I cooked this chicken and each time I feel i'm getting better at it. I decided to make a video this time just in case anyone reading this post might be interested in giving it a try.


This meal consist of two of my favorite items, sauteed green beans and grilled chicken.  I used a recipe that I found online for the Crispy Chicken Costoletta.  Its not complicated to make at all.  The ingredients are similar to preparing fish except for the chicken is grilled and the fish is baked.

The Recipe

2 chicken breasts, cut horizontally, and pounded to about 1/4 inch thick or chicken cutlets
Zest of 1 lemons
1/2 cups plain breadcrumbs (Try Panko Breadcrumbs)
2 tablespoons freshly grated parmesan cheese (optional)
1 eggs
1 tablespoons water
3 tablespoons flour
1 teaspoon ground pepper
1 teaspoon kosher salt 

Directions

For the chicken:. Preheat oven to 200°F.
Zest two lemons. Bake zest for about 5 minutes until dry.

On one paper plate combine flour, pepper and salt. On another paper plate combine eggs and water, whisk until combined. On another paper plate combine dry lemon zest, bread crumbs and cheese.

Place pounded chicken in the flour, coating well, followed by the egg mixture and the bread crumbs.

Heat 2 Tablespoons olive oil and 1 Tablespoon butter in a large frying pan over medium heat.

Place chicken in skillet and cook on each side until brown and crispy.


This is one of my husband's favorite dishes.  This is really an average size chicken breast, I pounded it until it was very flat, then dipping it in the egg, flower and breadcrumbs really adds a nice coating and thickens it up a bit.
