Cooking ~ How to Cook Shrimp Peas & Rice

I was looking through my freezer deciding what to cook when I saw the shrimp, I said to myself.... humm, I bet I can turn this into something delicious  like Shrimp Peas & Rice that won't take too long to cook.  So, I took out a box of "Rice a Roni" from the cabinet and prepared it according to the direction on the back of the box. Then before I let it simmer, I added the peas and the shrimp. After about 15 minutes of simmering, it was ready.... all it all , this simple meal took about 30 minutes to make and was simply delicious!

Ingredients

1 lb shrimp, peeled and deveined
1 box of Rice a Roni
1/2 cup frozen peas
2 tablespoons virgin olive oil

Directions
In a medium size heavy pan add virgin olive oil.  Prepare Rice a Roni as directed on the back of the box, basically sautee the rice until brown. Add the seasoning mix that came in the box along with the shrimp and frozen peas, bring to a boil. When all liquid is absorbed reduce heat to low and cover. Cook on low for about 15 minutes, until rice is cooked through.
